Potato scales - different versions for different areas of application
First of all, a primary characteristic is definitely the weight. Platform scales known as bag scales or potato scales are used here. These high-quality, digital scales were specially developed for professional, daily use in agriculture, industry and commerce. A backrest allows the potato sacks to be placed safely. Strength scales for professional use
The process of determining the starch of potatoes is a little more complex. This value is an important quality feature. Depending on the variety, for example in waxy potatoes, the content may not be too high (10-12%). Predominantly solid cooking species are 12-14% and floury between 15 and 18%. To determine this value for the potatoes in question, you basically proceed as follows (Archimedes principle): Dry, washed potatoes are first weighed. The same potato sample is then weighed again under water. This process only has to be done once. The scale remembers the stored value (even after the scale is switched off) until it is overwritten with a new calibration. Due to the buoyancy, the underwater weight of the potatoes changes depending on the starch content (dry matter). The underwater weight of the potatoes is directly proportional to the starch content. High underwater weight = high starch content. It is no longer — like before – It is necessary to always take exactly 5kg of potatoes as a reference value and then select the values by hand from a table. By determining the dry and submerged weight, the starch scale directly calculates the specific density and, based on standardized formulas, the resulting starch content of the potatoes.
Thanks to the structure of the starch scales, the entire process of determining the starch content is relatively easy to accomplish. Everything you need is basically already on board. You can choose between an inexpensive solution with muscle power (potato starch scale KSM) and a back-friendly, fully automatic one (potato starch scale KSW).
